Iva Marqués, a tenured professor of Nutrition at the Faculty of Health and Sports Sciences at the University of Zaragoza, has written a letter to the Director General of Academic Planning, Marco Rando Rando, showing her support for the Aula Animal initiative, which calls for vegan students to have the same right as other students to eat in school cafeterias in Aragon.

According to various studies and scientific institutions, a well-planned vegetarian diet is nutritionally adequate for all stages of life, including childhood and adolescence. Therefore, I support the request to include vegetarian menus, including vegan options, in school cafeterias in the Autonomous Community of Aragon.
